  • Begin by bringing 3.5–4 liters of water to a boil in a pot. Add the pork trotters and beef shanks, allowing them to simmer. Remove any impurities that rise to the surface. Toss in a bundle of crushed lemongrass and onion, and let everything simmer for around 40 minutes. 
  • Stir in the filtered Hue shrimp paste and continue simmering for another 15 minutes. Then, add scallion heads, roasted sesame seeds, water, and a packet of Hue beef vermicelli spice mix. 
  • Season with fish sauce, seasoning powder, chicken stock powder, and roasted rice powder, adjusting to taste. Once you’re satisfied with the flavor, turn off the heat.

Serving

  • Boil the rice vermicelli until just tender, then place it in serving bowls. Arrange the meat, sausage, pork hock, and pig’s blood on top. 
  • Sprinkle with chopped herbs and thinly sliced lemongrass, then ladle the broth over the noodles. Serve alongside blanched water spinach, shredded banana blossoms, bean sprouts, fresh herbs, lime, chili, and satay sauce. 
  • For an extra flavor kick, add more chopped scallions, chili, and pepper to your bun bo Hue noodles.
